SPECIAL THANKSGIVING RECIPE

Pumpkin Banana Mousse Tart

From Barefoot Contessa Family Style


Pumpkin Banana Mousse Tart

For the crust:

  • 2 cups graham cracker crumbs (14 crackers)
  • 1/3 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 pound (1 stick) unsalted butter, melted

For the filling:

  • 1/2 cup half-and-half
  • 1 15-ounce can pumpkin puree
  • 1 cup light brown sugar, lightly packed
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 extra-large egg yolks
  • 1 package (2 teaspoons) unflavored gelatin
  • 1 ripe banana, finely mashed
  • 1/2 teaspoon grated orange zest
  • 1/2 cup cold heavy cream
  • 2 tablespoons sugar

For the decoration:

  • 1 cup (1/2 pint) cold heavy cream
  • 1/4 cup sugar
  • 1/4 teaspoon pure vanilla extract
  • Orange zest (optional)

Preheat the oven to 350 degrees.

Combine the graham cracker crumbs, sugar, cinnamon, and melted butter in a bowl and mix well. Pour into an 11-inch tart pan with a removable bottom and press evenly into the sides and then the bottom. Bake for 10 minutes and then cool to room temperature.

For the filling, heat the half-and-half, pumpkin, brown sugar, salt, cinnamon, and nutmeg in a heat-proof bowl set over a pan of simmering water until hot, about 5 minutes. Whisk the egg yolks in another bowl, stir some of the hot pumpkin into the egg yolks to heat them, then pour the egg-pumpkin mixture back into the double boiler and stir well. Heat the mixture over the simmering water for another 4 to 5 minutes, until it begins to thicken, stirring constantly. You don’t want the eggs to scramble. Remove from the heat.

Dissolve the gelatin in 1/4 cup cold water. Add the dissolved gelatin, banana, and orange zest to the pumpkin mixture and mix well. Set aside to cool.

Whip the heavy cream in the bowl of an electric mixer fitted with a whisk attachment until soft peaks form. Add the sugar and continue to whisk until you have firm peaks. Carefully fold the whipped cream into the pumpkin mixture and pour it into the cooled tart shell. Chill for 2 hours or overnight.

For the decoration, whip the heavy cream in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and continue to whisk until you have firm peaks. Pipe or spoon the whipped cream decoratively on the tart and sprinkle, if desired, with orange zest. Serve chilled.

Serves 10.

The Crown Adventure

" Come on!" urged Emily.
"Hurry up! I want to see the secret place!" Donna demanded.
"Yah! Please! Please! "Emily pleaded.
"Okay ! Okay! Just stop screaming in my face, " I replied with a sigh.
Outside, it was pouring. It was pouring like the sky had fallen down.
My friends were too excited to stand still.
" Oh! I should have never told them about the secret place I told them about over the phone. " I thought to myself. Even though it was raining really hard, my friends rushed over and started attacking me with questions.
I went over the the bookcase and started pushing.
" Are you trying to make the bookcase fall down on you? " asked Emily.
"Can you stop being so annoying? If you want to find out, just come over and help." I answered Emily wearily.
Three of us pushed, " One...uh...two...almost got it.. uh... and pushed!" Donna yelled.
"Not so loud," Emily complained, but also helped push. "You're hurting my ears!"
"EEEEEKKKK!!!!!!" the bookcase creaked. It had not been opened for many, many years.
We all stood stock-still staring wide-eyed at what we had discovered.
We had discovered a building shaped like a crown. There was golden light shimmering on it. Water surrounded it like a mini lake.
The mini lake also looks small, but nothing can be seen beyond the lake. The crown was goldish, had a door on it, and has steps leading up to the door.
I stepped into the water. My jeans soaked instantly and I stepped right back out. The water was freezing! I stepped in again. Water came down in my shoe like a waterfall. My legs shivered with coldness.
After a few minutes, we recovered from the fascinating crown and from the cold. Trying to ignore th coldness in the water, we waded across to the building that is shaped like a crown. The water came up to waist length. Surprisingly, the water got warmer and warmer as we wade deeper and deeper into the lake.
We finally reached our destination after what felt like forever.
" Wow! It's warm here!" Emily yelled with excitement.
" True! I can even feel my face sizzle with warmth, " Donna answered with a smile that lit up her whole face.
I questioned," should we go inside?"
"Hmmmm......sure!" replied Emily.
" Just get ready to defense yourself when any snake- ninjas come out!" Donna shivered.
" Come on, Donna, I'm 99% sure that there are no snake-ninjas in there, or at least not in this pleasant place," I answered assuringly.
In a quick flash, Emily yanked the hidden door open and gasped loudly.
Donna asked excitedly, " What! What! what do you see?"
"Donna, you sound like my three-year-old cousin!" I told her disapprovingly.
"Sorry! I was just rally curious what Emily found, " Donna honestly replied. Then she pushed Emily in and started shouting, " OOOOHHH MMMMMYYYYY GGGGOOOODDD!!!!!!" " LOOK AT THAT BEAUTIFUL TREASURE CHEST! I'M SURE IT COSTS A LOT!" Donna continued to holler.
I went closer and commented, "Hey! There's a piece of paper taped onto the wall!"
"Read it out loud." Emily declared.
Okay. So it says:
"Dear finder,
I hope you had fun and like this place I built. Open the chest under this piece of paper
to find treasures I collected all my life. There is stuff in there like ancient swords, precious
bracelets, and necklaces. I even got a gold nugget-"

"GOLD NUGGET!" Donna interrupted. " OH MY! I CALL FOR THE GOLD NUGGET!"
Emily shrugged and motioned for me to continue. So I did.
"-gold nugget in there. Have fun looking for stuff!

The chest is velvet o the outside and the walls are goldish just like the outside, but more yellow.
Donna hurriedly opened the chest and half wailed and half cried," It's locked!!! What should we do?"
"Errrr.....Donna, if you have been not that excited, you would probably have seen the key next to the lock." Emily responded calmly.
"Oh! Right!" Donna said and she opened the chest.
Of course, Dona took the gold nugget. It was very shiny and it catches your eyes very often.
"Oh! It's heavy!" Donna squeaked.
"What had you expected? It's called GOLD nugget!" exclaimed Emily.
I took a necklace wit ha heart in the middle. There were words in the heart. It says :

BFF




Emily took a bracelet made with lavender colored beads and squealed," I really, really like purple!"
Then, Donna checked her pink watch and worriedly remembered," Oh dear! It's 1:50pm already! Too hard! You two need to help me!"
"Sure," Donna and I spoke in unison.
" IT wouldn't open!" Emily cried again.
"Oh dear! What should we do! I promise my brother to go to the movie theater and that means I only have five more minutes!"Donna worried.
"Donna, you sound like my grandmother," I told her.
At the same time, Emily mentioned,"Despertly worried is a great name for you!"
" Come on, you guys, not enough time for jokes!" Donna started crying because she was scared even though she is in 8th grade.
"it's not a joke Donna!"Emily argued.
"Okay! You two! I have an idea!" I stopped them
I whipped out my cell and called my brother.
He answered with a grunt," What now@ Don't you know I'm sleeping?"
"I know, but I" trapped." I yelled into the phone.
He came and opened the bookcase with our help.
"OOOOOOOOOOOMMMMMMMMMMMM....."my brother didn't even finish his sentence,well phrase,but I can tell he is surprised. His eyes were bulging and they were as wide as can be.
He said," So this is where you were. Let me see your discovery. "Then he shoved me over and stepped in.

The Missing Brother of the Crown Adventure

It's been raining all day, I , Cindy, have been stuck inside the house all afternoon. The rain was pounding against the window as loud as if pebbles were being thrown into it. I have no idea how my brother manage to be so quiet and do something.
By the way, where is my brother? I know he went in the crown kingdom, but ...... did he come back?
Frantically. I searched around the whole house. No brother. The backyard, no brother.
As I was dripping wet, I ran to the phone and punched in the number of Emily, my friends cell.
My brother might be anywhere and I am left alone in the house.
After the second ring, Emily picked up the phone cheerfully,
"What's up, Cindy?"
"Do you mind coming over right now!"
Emily must have heard panic in my voice so she replied, "I'll be over immediately," and she hung up
I wanted my other friend, Donna to come as well so I grabbed the phone again and dialed Donna's number. No one answered.
" I guess I just have to stick with only Emily's advice," I sighed.
then, a sound from the front door made me jump. What if the police came and found me home by myself.....or worse......a thief! Calm down, I told myself. It's probably just Emily.
In case it was someone else, I peeked out the window. And there was Emily's mother's car.
When I opened the door, suprisingly though, I saw two people standing there. I realized, in a flash, Emily had picked up Donna so when I called Donna no one answered.
"What took you so long just to open a door? I'm soaking wet!" Emily exclaimed.
" So am i," agreed Donna
"Come in guys-" I started.
"Girls..." Emily corrected'
"Uh,girls.....it's my brother, I have no idea where he is, " I told them.
"Didn't he enter crown kingdom?" Donna asks.
"Yah! So I wonder if you guys - girls would come with me to find my brother." I replied
"You bet!" came the answer from my friends.

"CREEEEEEEEEK!" the moving bookshelf schreeched like it was going to fall right off.
"I wonder if it's as old as King Arthur's time." I told me friends.
"Maybe, maybe not,"Donna answered.
"Oh, stop being like that, Donna!" Emily protested.
I looked behind the bookshelf and saw something that took my breath away again. Emily and Donna's eyes were as wide as can be.
As I stepped in, I feel my face glowing and carefully, we waded across to Crown Kingdom.
We also made sure the door was securely open, not like last time.
While the water was freezing cold, the building have a warm, familiar feeling.
As we approached the building, something seems different. When we first saw it, we couldn't take our eyes off of it's gleaming walls. Now, it was as dull as can be.
Donna tugged the door open. Inside, things were scattered everywhere.
Donna exclaimed,"Oh no! What had your brother do!"
Emily added, "Or what something or someone do to your brother!"
Suddenly, "hahahahah!"coming from the ceiling and it surprisingly sounded like my brother. I looked carefully and saw a camouflaged stair that are stoop and golden leading to the ceiling.
"Hey girls!" I excitedly said.
Donna and Emily looked my way.
"follow me! I think I know where my brother is!" I replied.

Ghirardelli® Individual Chocolate Lava Cakes Recipe

Ingredients

  • Centers:
  • 2 ounces Ghirardelli 60% Cacao Bittersweet Chocolate baking bar, broken or chopped into 1-inch pieces
  • 1/4 cup heavy cream
  • Cakes:
  • 4 ounces Ghirardelli 60% Cacao Bittersweet Chocolate baking bar, broken or chopped into 1-inch pieces
  • 1/2 cup unsalted butter, cut into pieces
  • 2 large whole eggs
  • 2 large egg yolks
  • 1/3 cup granulated white sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup cake flour
  • Raspberries for garnish
  • Whipped cream for garnish


Directions

  1. To make the centers, in the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 2 ounces of chocolate with the cream. Whisk gently to blend.
  2. Refrigerate for about 2 hours, or until firm. With your hands, form into six balls; refrigerate until needed.
  3. Preheat the oven to 400 degrees F. Spray six 4-ounce ramekins or custard cups with cooking spray.
  4. To make the cakes, in the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 4 ounces of chocolate and the butter, stirring occasionally until smooth.
  5. In a large bowl, with an electric mixer, whisk the whole eggs, egg yolks, sugar, and vanilla on high speed for about 5 minutes, or until thick and light. Fold the melted chocolate mixture and flour into the egg mixture just until combined. Spoon the cake batter into the ramekins. Place a chocolate ball in the middle of each ramekin.
  6. Bake for about 15 minutes, or until the cake is firm to the touch. Remove from the oven and let sit for about 5 minutes. Run a small, sharp knife around the inside of each ramekin, place an upside-down plate on top, invert, and remove the ramekin. Garnish with raspberries and a dollop of whipped cream.
